Expansion Announcement: Rustic Root Sets Up at a New Location

Rustic Root, a renowned restaurant in Gaslamp, is preparing to expand its operations and open a second location in Solana Beach. The new establishment is scheduled to open in July and will be situated at 343 S. Highway 101, Suite 100, as part of the Sand Box development. The design team at Davis Ink and architect Arch5 Design Studio have collaborated to infuse the space with the distinctive Rustic Root ambiance while incorporating a Solana Beach twist.

The original Rustic Root, which first opened its doors in the Gaslamp quarter in 2015, is celebrated for its delightful comfort food selections, such as Texas-style smoked ribeye, firecracker shrimp, and homestyle butter biscuits with maple pecan and charred jalapeño butter. The new location will continue to offer the same regional and local cuisine, alongside an elevated cocktail program featuring classic favourites like margaritas and signature concoctions such as A Lover’s Flannel.

Mike Georgopoulos, a partner at RMD Group, has expressed enthusiasm about the expansion and highlighted the team’s extensive search for a suitable location. He firmly believes that the small-town ambiance and tight-knit community in Solana Beach make it the ideal setting for Rustic Root. Georgopoulos has also expressed aspirations of incorporating live music at the new location, pending permits, and has assured that the same Rustic Root experience will be transplanted to this fresh neighbourhood.

In addition to Rustic Root’s expansion, other notable culinary developments in San Diego include the opening of Bafang Dumpling, a popular dumpling eatery originating from Orange County, and the debut of Shawarma Guys, which has transitioned from a food truck to a brick-and-mortar establishment in La Mesa.
