Mackie’s of Scotland, a cherished ice cream brand in Scotland, has achieved a remarkable feat by introducing the first-ever glow in the dark ice cream in the country. The groundbreaking creation, named the “Light Up” Lemon Sherbet, is set to make its debut at the 10th anniversary of the Spectra Light Festival in Aberdeen.
By utilizing natural ingredients, Mackie’s has developed a special recipe that causes the ice cream to illuminate under UV light. The key component responsible for this unique phenomenon is riboflavin, also known as vitamin B2. Pauline MacLeod, NPD Technologist at Mackie’s, was the mastermind behind the concept and successfully brought it to fruition.
The exclusive “Light Up” Lemon Sherbet ice cream will be available solely at Mackie’s 19.2 ice cream parlour, conveniently situated next to the Light Festival. This special offering will only be accessible for the duration of the festival weekend, with limited stock available for ice cream enthusiasts.
Pauline MacLeod expressed her thoughts on the creation, stating, “We wanted to create a memorable experience to commemorate the festival, and what better way than a glowing ice cream? Despite its unconventional appearance, it is completely safe to consume, made entirely from natural ingredients. A flavour like lemon sherbet perfectly encapsulates the essence of this unique treat and has received glowing reviews from our staff who have sampled it!”
This is not the first time Mackie’s of Scotland has showcased its creativity. The 19.2 parlour has previously unveiled unconventional flavours such as Haggis & Marmalade for Burns night, and seasonal offerings like Jaffa Cake, Christmas Trifle, and Pigs in Blankets during the festive season.
Yvette Harrison, the Parlour Manager, was the originator of the UV ice cream concept. She expressed her excitement, stating, “To have such a distinctive ice cream available for ice cream enthusiasts over the weekend is incredibly thrilling. Beyond its delicious taste, it brings a real ‘wow’ factor, which perfectly complements the adjacent Light Festival. Customers have been participating by placing their ice creams under the light to witness its enchanting glow. I was inspired by a friend who is featuring in the festival this weekend and was truly impressed by Pauline’s ability to experiment and bring it to life in time for the festival. We are confident it will be a big hit throughout the weekend.”
