Renowned Chef Nico Introduces Sole Club to Finnieston Dining Scene

Renowned chef Nico Simeone is set to make his mark on the Finnieston area with the highly-anticipated grand opening of his latest culinary venture, Sole Club, located at 1132 Argyle Street. Opening its doors to the public on February 27, Sole Club will take the place of the former Six by Nico, which has since relocated to a larger venue in Merchant City.

This strategic move for Chef Nico was driven by his desire to transform and rejuvenate the space that originally housed the humble beginnings of Six by Nico back in 2017. With a vision to redefine the dining experience, the esteemed chef will combine the traditional ‘chippie’ with an exclusive 20-seat speakeasy-style fish restaurant, offering patrons a unique and immersive culinary journey through a seemingly ordinary fridge door, which leads to a world of gourmet dining.

Reflecting fondly on the significance of Finnieston in his culinary journey, Chef Nico emphasized, “Finnieston is special to us, it’s where it all began for Six by Nico. When we decided to move to a bigger venue in the Merchant City, it was never a question of giving up the venue; it’s too big a part of our story.”

Regarding the new concept of Sole Club, Chef Nico expressed his hope for it to replicate the success of Six by Nico, stating, “I believe in the Sole Club concept and think it can go on to follow in Six by Nico’s footsteps – but first it’s about making Finnieston a success.”

The inspiration for Sole Club is rooted in Chef Simeone’s family history, with multiple generations owning and operating chippies. Drawing from this rich heritage, he aims to pay homage to the classic fish and chips while also redefining and enhancing certain elements of the traditional dish, offering patrons a distinctive and experimental dining experience.

While the menu will feature timeless classics such as fish and chips, diners can also anticipate innovative dishes like monkfish Kiev, an indulgent ‘ultimate’ fish finger butty with fennel slaw and tartare sauce, and a tantalizing lobster roll featuring saffron and orange emulsion and shellfish butter.

Prospective diners will need to plan ahead, as Sole Club will only accommodate a limited number of guests weekly, a departure from the bustling setting of Six by Nico venues. Reservations will be released monthly, emphasizing exclusivity and ensuring an unparalleled dining experience for each visitor.

With the addition of Sole Club, Chef Nico’s restaurant group now oversees 17 venues across various cities in the UK, including Edinburgh, Manchester, and London. Moreover, the group has expanded internationally with the opening of a new establishment in Dublin, Ireland.

Sole Club’s unique blend of tradition, innovation, and exclusivity is set to establish it as a sought-after culinary destination, showcasing Chef Nico’s vision and creativity at new heights. For those eager to secure a spot at Sole Club, bookings for future visits will be available on a monthly basis, with reservations limited to 400 guests at a time.
