Exciting New Mexican Restaurant to Open in Bristol This Week

We are pleased to announce the imminent opening of a new Mexican restaurant on Whiteladies Road in Bristol this week. This exciting addition to the Bristol food scene is brought to you by the esteemed hospitality group, Season + Tate, founded by Kieran and Imogen Waite.

Season + Tate already boasts a successful portfolio of three renowned restaurants in Bristol, including the popular Spanish tapas spots Bravas and Gambas, as well as the beloved Mexican restaurant Cargo Cantina. The talented head chef from Cargo Cantina, Sean Martin, will be spearheading the kitchen at the new restaurant, Condesa. Describing the menu as “food that gives you dopamine,” Martin promises a dining experience that will bring joy and satisfaction with every bite.

The restaurant will open with a soft launch from March 19-23, offering reduced capacity and dinner service only. This will be followed by all-day service from March 25-30, and then the terrace will open with walk-ins permitted from April 1. Bookings are now available for those eager to secure a spot at this highly-anticipated new dining destination.

Condesa’s menu will showcase a blend of classic Mexican cuisine alongside innovative creations inspired by modern Mexican cooking. The kitchen will focus on fire and smoke to bring out bold flavors, offering an enticing array of dishes to tantalize the taste buds. Some highlights from the menu include Bristol cheddar quesadilla with shallots and pineapple salsa, beef tartar tostada, and fried chicken wings.

For those with heartier appetites, the restaurant will also offer larger dishes such as drunken mezcal prawns, grilled skate wing, smoked pork belly, and charred hispi cabbage. Head chef Sean Martin expresses that “Condesa has been a long-term passion project, and the menu is designed to work for both a quick bar snack and a special celebration.”

The kitchen at Condesa will be equipped with a custom-made grill, and the restaurant will feature a hidden mezcal den, serving a selection of this artisanal beverage, as well as an abundance of tequila. Kieran Waite, of Season + Tate, shared his enthusiastic outlook on the new venture, stating, “In Oaxaca we fell in love with mezcal, and the mezcal den is a fun little detail to showcase that.”
