The thriving culinary and beverage scene in Mexico City has attracted the attention of many talented chefs and bar directors, and now, San Diego will have the opportunity to enjoy a taste of Mexico City’s offerings without leaving the city. This summer, the team behind Puesto will be unveiling Roma Norte, a sophisticated cocktail bar inspired by Mexico City, located adjacent to their establishment at The Headquarters.
Leading the project is Beau du Bois, the current vice president of bar & spirits at Puesto, and Marisi, a highly acclaimed bartender who has received numerous accolades for his outstanding work in the industry. With creative control firmly in his hands, du Bois plans to incorporate his decades of experience, travel, and mixology expertise into the cocktail program at Roma Norte.
The menu will feature approximately 20 different cocktails, divided into two categories: immersive and signature. The former will consist of carefully crafted cocktails, while the latter will highlight the influences that define their brand. Du Bois aims to incorporate Central and South American spices, aromatics, and botanicals that capture the essence of the vibrant cocktail bars in Roma Norte.
Expect a delightful array of aromas, flavors, and textures, utilizing ingredients like coconut, pisco, and eucalyptus as garnishes. While tequila and mezcal will make an appearance, the menu will offer a balanced selection of spirits from across the board. Reflecting on the cosmopolitan atmosphere of the bars he’s encountered in Mexico City, du Bois looks to cultivate an inclusive space with a top-notch cocktail program.
Complementing the bar experience is chef Erik Aronow’s selection of seafood-centric small plates. The 3,000-square-foot venue, which includes a patio, is set to accommodate close to 100 guests.
Roma Norte will open its doors five days a week from 5 p.m. to 2 a.m., providing a late-night option in San Diego’s bustling hospitality scene. Du Bois hopes to fill a void by providing a space for industry workers to relax and unwind after their shifts, considering that many establishments tend to close early.
Apart from this exciting addition to San Diego’s culinary scene, food enthusiasts have other notable events to look forward to in the coming months. The San Diego Vegan Festival, scheduled for April 13, will feature over 60 vendors celebrating all things vegan, while Celebrate the Craft Food Festival on April 14 will host an exceptional lineup of local chefs and benefit The Ecology Center.
In addition to these events, there are some hidden culinary gems to explore, such as the delightful dining experiences at La Villa del Valle and Mekong Lao & Thai Cuisine, offering unique menus and pairings.
As Earth Day approaches, the Earth to Beer campaign is making strides in promoting sustainability in the brewery sector. Coronado Brewing Company has joined forces with San Diego Coastkeeper for a beer release in April, demonstrating the industry’s commitment to environmental stewardship.
