Miami’s Exclusive Gourmet Pop-Up: A Unique Culinary Experience for Adults

Miami Beach has recently seen the unveiling of its inaugural adults-only gourmet pop-up, the result of a collaboration between Aubi & Ramsa and Meat N’ Bone. Situated at Aubi & Ramsa’s establishment on Española Way, this pop-up melds Aubi & Ramsa’s refined style, Meat N’ Bone’s top-quality meats, and the innovative culinary skills of Chef Chucho Rojas, the Executive Chef of Meat N’ Bone.

The concept for this pop-up emerged when Rafael Ramsa, a co-founder of Aubi & Ramsa, crossed paths with Luis Mata and Gabriel Lluarado, the proprietors of Meat N’ Bone. What began as a casual meeting evolved into a closeness and a mutual effort to introduce a distinctive kitchen concept on Española Way.

Ramsa’s business partner, Matias Aubi, shared with New Times, “The collaboration between our brands was a perfect match. We share the same vision and commitment to delivering exceptional quality. They specialize in premium proteins, while we excel in premium spirits. And with Chucho [Rojas] joining the team, everything fell into place.”

Chef Rojas, trained in Paris and hailing from Venezuela, brings his Parisian flair and bold, delicious flavors to his sauces, crumbles, and other accompaniments. These additions elevate the essence of each dish without overshadowing the universal appeal of street food.

Aubi further delves into the unique creations, stating, “The distinct combination of flavors, including single-malts, bourbons, and tequilas, create an unforgettable impact. The subtle infusions of Champagne and gin add another layer of complexity to the dishes.”

The ambience and menu of the pop-up are thoughtfully curated to be inviting yet elegant, showcasing top-tier presentation and beverages without any hint of pretentiousness. For example, patrons can indulge in dry-aged New York strip tartare tacos accompanied by a mole infused with Salvación mezcal. Another highlight is the “White Russian Waffle” featuring smoked salmon, avocado crema, and a Belvedere vodka coffee dipping sauce. A falafel presentation with basil, pomegranate, and rich blue (or vegan) cheese, complemented by truffle oil and Macallan 12-year-old scotch, is also a must-try.

Emphasizing simplicity and genuine hospitality, Aubi expresses, “I have had the privilege of dining across the globe, and I have come to appreciate the beauty of simplicity and the warmth of true hospitality. That, to me, defines luxury.”

The pop-up, named Liquor Infused Kitchen, operates daily from noon to midnight, offering a diverse menu for brunch, lunch, and dinner. Additionally, guests can look forward to a daily rotating prix-fixe happy hour.
