Last November, the acclaimed chef and restaurateur Joe Vargetto launched the reimagined and expanded iteration of his Sicilian-inspired restaurant, Mister Bianco. This transformation encompasses the establishment of the cocktail bar Bianchetto, alongside the existing restaurant space on the ground floor and the La Sala function room upstairs. In a recent interview with Broadsheet, Vargetto articulated his vision for Bianchetto, underscoring that it is not a mere transitional area, but a distinct and independent space in its own right.
Upon arrival through the sliding door and an opulent Klimt-esque gold curtain, patrons are welcomed into a softly lit, 42-seat bar with a lofty ceiling that exudes an intimate and moody ambiance. The interior is adorned with crimson velour curtains, traditional leather booth seating, and ambient table lamps that cast a warm glow. Classic Italian films from the 1960s are projected onto the wall, further enriching the bar’s laid-back atmosphere.
Vargetto has been resolute in his desire for Bianchetto to be a sanctuary for relaxation, where guests can savour a laid-back and comfortable experience while being enveloped in the cinematic ambiance.
In collaboration with beverage consultant Orlando Marzo, known for his foundational role in Drinks by Loro and prestigious title as the 2018 Diageo World Class Australia Bartender of the Year, the bar presents a menu of classic Italian beverages infused with local flair, complemented by a curated selection of wines. Notable concoctions by Marzo include the Olive Oil Martini, crafted with Mount Zero cold-pressed frantoio olives, and the Sicilian Sour, an alluring variation of the Bloody Mary featuring Vargetto’s passata, marsala, and lemon. The Bianchetto Bellini, comprising sour Amarena cherries and elderflower cordial, stands out, as does the Americano, meticulously prepared tableside from a dedicated trolley.
The libations are complemented by a selection of straightforward yet mouthwatering Sicilian snacks, including olives ascolana stuffed with ‘nduja and fried, mortadella-filled scaccia (flatbread), and green-pepper-and-spicy-sausage spiedino skewers. Those with a penchant for sweetness can indulge in whisky-and-chocolate cigars or cassata-amaro gelato.
