Maria and Eva Konecsny, the founders of Gewurzhaus, have come up with a delightful recipe for Twix bars that will satisfy your sweet tooth without the guilt. These bars are packed with sustaining fats and get their sweetness from dates, so you won’t even miss the processed sugars. Here’s how you can make them over two days:
Ingredients:
Base
– 150g ground almonds
– 50g brown rice flour
– 1½ tsp ground cinnamon
– 80g salted butter, diced
– 50g honey
Faux caramel layer
– 90g pitted dried dates
– 70g pitted fresh medjool dates
– 180g peanut butter
– 50g seed butter (a mix of tahini and pumpkin seed butter)
– 150ml rice malt syrup
Chocolate layer
– 100g dark chocolate (90% cocoa), broken into pieces
– 60g honey
– 1 tbsp coconut oil
– Fleur de sel, for sprinkling
Method:
1. Preheat the oven to 160°C fan-forced and line a 28cm × 22cm rimmed baking tray.
2. Make the base by pulsing the ground almonds, flour, and cinnamon in a food processor. Add the butter and honey, then pulse until the mixture comes together. Spread the mixture onto the tray and bake for 15 minutes.
3. For the faux caramel layer, process the dates in a food processor, then add the nut and seed butters and rice malt syrup. Spread the mixture over the base.
4. Melt the chocolate, honey, and oil in a bowl set over a saucepan of simmering water. Pour the chocolate evenly over the caramel layer and sprinkle with fleur de sel. Refrigerate until set.
5. Cut the slice into 40 bars and store in the fridge for several months.
